Hello! This is Daniel Montoya, multimedia journalist for Bucket List Community News, coming to you with some delicious news. Being born and raised in Broomfield, I was not exposed to the food truck scene until I moved closer to the city. With Denver being a diverse city we can see the same diversity of food trucks on every corner.
Growing up in a Mexican household, my mom would always cook the most amazing Mexican cuisine. As a full-time college student at MSU Denver who is constantly busy obtaining my bachelor’s degree, it has been hard for me to go back home and eat some of my favorite home-cooked meals.
This guide helped me reminisce on eating my favorite meals and it will help you navigate throughout our beautiful city and try some delicious Mexican food, so warm those palates up and let’s enjoy some amazing food from south of the border.

Moreno’s Corn
One of the best places to get your daily corn intake is at Moreno’s Corn . This food stand is great for a late-night craving and it is perfect during these cold times because the corn in the cup warms up your hands quickly. When traveling down Mississippi Avenue, you won’t miss the bright lights, the long lines and the smell of the corn roasting.

This food stand brings such a friendly feeling where every customer is there to share the same experience with you. Plus, if you don’t want to wait in the cold, you can place an order for pick-up!
I remember when I first tried their famous papas asadas con elote (roasted potato with corn) and I was instantly hooked. The roasted potato with corn is topped with mayonnaise, butter, cheese, and salsas of your liking. There is also corn on the cob where the juices from a freshly made batch make your taste buds dance and the spice will make you want to complement it with a nice cold beverage.

On top of the tasty foods Moreno’s Corn has to offer, the best part about visiting this food stand is talking with the owners, José Luis and Sandra Moreno. The power couple opened up shop in 2022 and continue to thrive by selling yummy corn as their full-time gig. This food stand makes the list because the food is worth the affordable price (the cheapest item is $6) and the environment is relaxing and friendly.

Tacos Primavera
I wasn’t too familiar with Tacos Primavera at first, but now being an expert on comida Mexicana (Mexican food), I believe this food truck is a spot you don’t want to miss. This food truck has been in the food industry for more than 10 years and it continues to serve authentic Mexican dishes.

There is a wide variety of menu options to choose from like tacos and tortas and burritos. In my humble opinion, the best dish to try is the asada fries (steak fries) mixed with cheese, sour cream and green salsa. The fries are served in a large portion and it’s enough to fill up two bellies.
This plate is also served with extra salsas on the side but a warning to my non-salsa-eating readers, the red salsa will leave your mouth on fire, so make sure you have a gallon of milk equipped and ready to help ease the pain. The asada fries are a little bit on the higher price end but still very worth it. If you aren’t feeling the fries, another option that is just as tasty is the hamburgers which come with a ton of options to top your patty with.

This food truck is the perfect place for a fun date night to grab a quick bite to eat and step out of your comfort zone to explore different areas of the city. This food truck made the list because the meal was quickly prepared, the food’s delicious, it’s open late and the overall environment was welcoming.

La Estación Taqueria
After visiting Tacos Primavera, you won’t have to drive very far to reach La Estación Taqueria. Only two minutes apart from each other and also located off Alameda Avenue, this food truck has been open for two years and is packed with many mouth-watering options.
I got the recommendation from a family member to go give this place a try and let me tell you I was not disappointed. To start, I want to thank the owner, Marco Angeles, for giving me three free tacos to try. Before I dive into my favorite dish here at La Estación, the three tacos that Angeles let me try were tacos de carne asada (steak tacos), al pastor (type of pork) and barbacoa (type of beef or lamb).

Now I must say I’m a little bit biased when it comes to carne asada because that was my favorite to eat growing up, so I would have to say the tacos de carne asada were my favorite due to the meat being seasoned perfectly and it was very tender and juicy. The other two tacos were still great but the asada taco had more flavoring when it was combined with onion, cilantro and lime.
As for my favorite dish at the food truck, it’s hands-down the quesabirria. This authentic dish is a hybrid of a taco and quesadilla, filled with birria meat (beef or goat meat) and melted cheese that is hot and ready to eat. Plus the quesabirria is accompanied by some consommé (broth) to dip your quesabirria in to give it that extra flavoring.

The vibe of the food truck was a fun experience because it is painted with bright colors to make it really stand out to its customers. The truck was very clean and the digital sign hanging from the truck was a cool feature. This food truck makes the list because of Angeles’ hospitality and his quesabirria is one of the best dishes I’ve ever had!

El Coyote 1
If you are cruising down Federal Boulevard, then you have to make a pit stop at El Coyote 1. This food truck is not hard to miss due to its bright lights and very cool design.

The very first characteristic I noticed when passing by the food truck was not the bright lights but the location. From where you are ordering your food, you can see the Denver skyline and Mile High Stadium in the background. The overall aura of the scene was perfect as if the view was photoshopped.
Continuing with the food, I highly recommend trying their most ordered signature dish, vampiros (vampire tacos or tostadas). This dish consists of a tostada topped with meat of your choice, lettuce, pico de gallo, sour cream and freshly squeezed lime. It also comes with cooked onions on the side and a chili serrano pepper that will make you drink a lot of water from how spicy it is.

If you don’t feel like trying some vampires, then the next delicious meal is their nachos. The chips are hand-made and deep-dried by the owners Christian and Jacqueline then the chips are smothered in melted cheese, frijoles puercos (blended beans, mixed with chorizo and chile), sour cream, guacamole, jalapeños, pico de gallo and any meat of your choice. The nachos are served enough for two people and it will leave you stuffed after getting a couple of bites.
If you are feeling a little lazy and don’t want to order in person, you can place an order on DoorDash as well. With all that food being chowed down, you probably will be thirsty, the good news is that there are delicious agua frescas (flavored waters) to choose from. I believe the piña (pineapple) flavor was my favorite because it was freshly squeezed and it tasted perfect. Another great drink to try is the horchata (rice milk) which is one of the best horchatas I have tasted and trust me I have tasted a lot of horchata in my life.

Not only is the food amazing here but the hospitality I received from the owners Christian and Jacqueline was the cherry on top. After starting their business a few months ago they seem like they are heading in the right direction and hopefully, they will receive more customers.

Tacos y Elotes Los Armandos
Only minutes away from El Coyote 1 food truck, Tacos y Elotes Los Armandos is another stop to add to your list. This food truck has enough parking to bring the whole family as well and there are plenty of food options to choose from. The environment is very fun and exciting to enjoy some savory Mexican cuisine. I liked how the process was very easy to order with great customer service and the workers were very friendly.

On with the food, to start the prices were very affordable ranging from $2.50 to $15. The food portions are big enough for two to three people and the same with the drinks. The main dish I recommend getting is the burrito filled with your choice of meat, lettuce, tomato, onion, rice and salsas. This burrito is a 10/10 and to top it off with a nice cold melon agua fresca is a great combo.
Not only is the burrito my favorite meal but the corn was also amazing. The workers were nice enough to give me a free baked potato with corn, parmesan cheese, salsa with carne asada and al pastor on top—it was delicious.

The overall experience here at Los Armandos was lively. There’s Mexican music playing, everyone is upbeat and happy to serve delicious food and it was a fun time taking it all in. Not to mention that the food is very hot and warm straight from the grill and it helps to warm up your hands during the cold weather. I would recommend coming to this food truck to get the whole experience.
